A delicious side dish that can be served with just about anything. Tostones are fried plantains. Twice fried actually. How’s that for healthy?! Not everything in this blog is actually healthy if you haven’t figured that out. My take is everything is fine as long as it’s in moderation. Cool? Cool.
So plantains are not bananas like I used to think. So don’t try to substitute bananas for plantains. Also use green plantains. Once the plantain turns yellow it gets sweeter. If it turns brown it is even more sweet and these won’t turn out like they should. The greener the better here.

If you’re looking for something a little bit different as an appetizer or small snack, try out these easy to make persimmon bruschetta crostinis. Just dice up a persimmon into little 1/4 inch cubes, thinly slice some fresh basil leaves and mix in a bowl with some olive oil and a sweet vinaigrette. I use a honey ginger vinaigrette in this recipe but if you don’t have a sweet vinaigrette handy, just mix a little sugar into some regular white vinegar until you get the flavor you want.
For the crostinis, I just use a small baguette and thinly slice it and toss it in the oven at 350 until lightly crispy then top each piece with some whipped goat cheese. Top with the persimmon mixture, season with salt and there you go.
One of my favorite, simple and quick appetizers to make is fresh tomato caprese. The right ingredients and you have an incredibly fresh and delicious dish. Use a bad tomato or a bad mazzarella choose though and it’s not the same thing so buy the ingredients for this the same day you decide to make it.
2 vipe ripened tomatos
1 packet of fresh buffalo mazzarella cheese �
1 pack of fresh basil leaves
fresh cracked pepper
sea salt or kosher salt
