Gnocchi Gorgonzola with Sausage

Gnocchi is one of my wife’s favorite dishes so I get this request from her quite often. If you’ve never had gnocchi before they are soft potato dumpling and they are really good. I make these a variety of ways but this particular dish is made with some spicy andouille chicken sausage, green onions and tomato. Normally I make this with a fresh pack of gorgonzola but this recipe is super easy if you have a Trader Joes nearby. They have a frozen gnocchi with gorgonzola cream sauce that you just need to toss in a pan over a little olive oil. Add some sausage, sauteed green onions and tomatos and you have a nice little dish. Top with a little grated cheddar cheese and red pepper flakes and boom, easy simple meal that takes 10 minutes to cook.

INGREDIENTS

1 packet of Trader Joe’s gnocchi gorgonzolla
1 chicken sausage link
1 green onion
1/2 tomato

Cook the gnocchi as instructed on the package. Heat up another pan with a little dash of olive oil (1 tsp), slice up the sausage into thin slices and cook throughly as instructed. Add in the green onions and tomatos and saute for 2 minutes. Then combine all ingredients together. Serve and top with a little shredded cheese (cheddar or parmasean). If you like some spice, add some red pepper flakes. Quick, easy and tasty.
